Penne Amatriciana

400g penne
120g streaky bacon
1 onion
1 dried chilli
1can (450g) chopped tomatoes
3 tbsp olive oil
salt and pepper
dash of maggi or worcester sauce
1 tsp sugar
chopped parsley and parmesan

Deseed and chop up the chili. Thinly slice the onion and chop up the bacon into little rectangle strips. Fry the bacon until the edges become lightly crisp. Add the onion and chili. Cook on a low to medium heat until the onions caramelize.

Add the chopped tomatoes and sugar and leave the sauce to thicken on a low to medium heat for 15-20mins.

Season with a little salt, pepper and dash of maggi or worcester sauce.

Pour over cooked pasta and serve with chopped parsley and grated parmesan.

Nice! These are the kind of recipes that are popular here , light & easy to make and the ingredients are easy to find too.... Like many of us probably have most of these ingredients in our cup boards.... Question is what is "streaky bacon"?

As in pork belly bacon strips. We tend to use back bacon in England, unless you specifically buy it streaky (i.e. the fat not just outlining the pork but streaking amid it).

Cool! streaky bacon is available at most local grocers.... We are having Mostaccoli pasta tomorrow which is similar to Penne (tubular shape pasta) so, I'll let you know how my family likes the recipe....
