Don't know how you call it in english (we call it "panet" in french), but i'm talking about the white carrots...
I have registered to a bio farm that makes a weekly basket full of fresh vegetables... These last few weeks, there were a lot of those white carrots... We had lots of receipes for it but Mylene cut them in "julienne" (thin fries cut), added a little oil and fresh local garlic put made them roast in the oven...
It is i must say a VERY good replacement for potatoes to make fries... The roasted taste developed by these white carrots is very good and the texture is also very good with nice roasted results...

I tell you what though, the best fries are cooked in duck fat with a little truffle oil, Parmesan cheese, garlic + parsley sprinkled on top.

Okay, cool! along with roasting, parsnips can be used in a recipe I've tried recently as a substitute for potatoes in a garlic mashed Parsnips w/ chives and Mascarpone cream...... For diabetics that want less complex carbohydrates their diet.......
