Definitely cut straight from the potato like "Five Guys", "Rallys" and "Wendy's" (new with sea salt!)

I haven't tried theirs yet but a brand new "Five Guy's" is about to open up at our Mall here in a few weeks.... I like all cuts of French fried potatoes... That's like asking who my favorite child is....

Don't know how you call it in english (we call it "panet" in french), but i'm talking about the white carrots...

I have registered to a bio farm that makes a weekly basket full of fresh vegetables... These last few weeks, there were a lot of those white carrots... We had lots of receipes for it but Mylene cut them in "julienne" (thin fries cut), added a little oil and fresh local garlic put made them roast in the oven...

It is i must say a VERY good replacement for potatoes to make fries... The roasted taste developed by these white carrots is very good and the texture is also very good with nice roasted results...

I have not seen many white carrots here in AZ but I love the taste of roasted baby carrots with fresh garlic for both a sweet and savory flavor profiles.......

My top 3

Curly
Thick cut
Waffle

I tell you what though, the best fries are cooked in duck fat with a little truffle oil, Parmesan cheese, garlic + parsley sprinkled on top.

Okay, cool! along with roasting, parsnips can be used in a recipe I've tried recently as a substitute for potatoes in a garlic mashed Parsnips w/ chives and Mascarpone cream...... For diabetics that want less complex carbohydrates their diet.......
