Awesome BBQ Ribs recipe, come on weekend!

4 pounds (1 large slab) Pork or Beef Ribs
2 Tblsp salt
2 oz white vinegar
Chef's secret BBQ sauce (below)

Cut the slab into halves. Place the ribs in a large kettle of boiling water. Add the salt and vinegar. Return to boil. Reduce heat and simmer for 30 min. Drain and pat dry. Cover ribs liberally with secrete sauce. Marinate, covered, in the refrigerator for at least 1 hour prior to grilling. Grill over medium hot coals or gas grill (med high heat), turning and basting frequently with da sauce.

Chef's not yet famous secret BBQ sauce:

1 6oz can tomato paste
3 Tblsp Worcestershire sauce
1 12oz can frozen orange juice concentrate (thawed)
2 Tsp Cayenne pepper
4 Tblsp water
2 Tsp black pepper
3 Tblsp Dijon mustard
1 med onion finely chopped
3 Tblsp brown sugar
1/3 cup fresh minced garlic
2 Tblsp red wine vinegar
1 Tblsp Hickory smoke (optional)
Combine all ingredients in a bowl and mix well...

Fire up your BBQ this weekend guys, and as always happy grilling!

yeah thats what i was going to say, chef had already put up some burger receipes!


im not a gib ribs fan, but might give it a try although i dont think the girlfriend will be up for this one :lol:

No offense Chef but boilin ribs is blasphemy round here.Ive done it before but its a last resort type of thang.You got any good BBQ pork butt recipes for pulled pork?

Had about 15 people over for Christmas dinner and made these ribs along with some with regular BBQ sauce and a 12 lb. prime rib roast. Another success! Thanks Chef!

OK i got two racks i have to cook... not used to cook ribs. i'll try to get some inspiration from this thread and keep you updated!

I'm glad to hear it Astor! Will Mylene be joining you in this culinary endeavor? Since you have that awesome bbq rotisserie on your grill you should cook the racks on it..... Season the ribs at least 2 hours prior to grilling and only apply your favorite sauce during the last 15 mins of cooking.... Then let the ribs rest about 10 minutes before cutting into them.... As always, happy cooking!

Astor, I remember you saying Mylene is mostly or a strict vegetarian and I have been developing some new vegetarian and vegan recipes that I'll share if you're interested..... Like marinated grilled eggplant w/ green tea dipping sauce...

i need to find a new receipe for chicken breast on BBQ but with a tomato based BBQ sauce or marinade... My main marinades are the usual greek origano or the garlic/soya sauce/honey with a twist... but i don;t have any tomato based BBQ sauce home made receipe...

Barbecue Sauce:
1 1/2 cups chopped yellow onion (1 large onion)
1 tablespoon minced garlic (3 cloves)
1/2 cup vegetable oil
1 cup tomato paste (10 ounces)
1 cup cider vinegar
1 cup honey
1/2 cup Worcestershire sauce
1 cup Dijon mustard
1/2 cup soy sauce
1 cup hoisin sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 tablespoon crushed red pepper flakes

Combine ingredients and simmer in small sauce pan over med low heat for 30 min stiring occasionally. Baste your chicken w/ the BBQ sauce during the last 15 min of BBQ cooking..... As always, happy cooking!

I'm going to give this a try before summer's out. I've been eating delicious ribs once a week for the last month at my local pub.

Any suggestions for a drink pairing? I was thinking a Malbec or Shiraz. Beer would probably be the way to go.
