Grilling Recipe

Here is a recipe that is very tasty and kinda healthy that my family enjoys this time of year....


Chef97's Sizzling Grilled Chicken Salad

> recipe yields 4 servings

Salad dressing:
1/3 cup fresh minced garlic
1/3 cup Balsamic vinegar
2/3 cup extra virgin olive oil
1/2 cup grated parmesan cheese
1/3 cup honey
1 Tsp oregano
1/4 Tsp Kosher salt (regular salt ok)
1/2 Tsp cracked black pepper
1/3 cup fresh chopped parsley
Proceedure:
Combine all ingredients in a blender until all is incorporated and refrigerate covered. (no blender, use a large bowl and whisk all ingredients together vigorusly until incorporated)

Salad:
12 OZ per person of your favorite freshest mix of salad greens (I like the "spring mix" best)
1/3 cup grape tomatoes per person (any tomato will do)
1/3 cup seeded cucumber slices per person
1/4 cup fav crumbled blue cheese (optional)
1/4 cup candied pecans (available in baking section in most grocers)
Proceedure: Place all salad greens in large bowl and mix well with salad dressing and set aside

Grilled Chicken:
(4) 8 oz boneless skinless chicken breasts
1/3 cup olive oil
1/3 cup fresh minced garlic
1/4 cup soy sauce
1/4 cup honey
1 Tsp black pepper

Proceedure:
Mix all ingredients together to make marinade. Marinate chicken a min of 1 hour prior to cooking
grill or roast in oven at 350 degrees until min internal temp of chicken reaches 165 degrees. About 30/40 minutes and buy at meat thermometer to ensure food safety.

Plating the salad:

Pile high dressed salad mixture in center of large plate or salad bowl, garnish around plate or bowl with tomatoes and sliced seeded cucumbers, place sliced sizzling chicken on top then finish with pecans and blue chees crumbles..

This recipe is a knock out!!!

The salad dressing is a home run I was told if I could bottle it and sell it I'd probably be rich. :lol: Anyway, it's a Bistro type entree salad that your girlfriend or wife would like. It could be a team effort type meal. Have the lady do the salad part and the fellas take care of grilling the meat while drinking a cold beer... Nice... 8)

Good stuff Chef, my wife and I made this for lunch today and it was wonderful. The dressing has a nice sweetness to it, but for me the kicker was the marinated chicken it was wonderful!

Chef this one has been in my personal cook book since you posted it originally. We eat it multiple time a month during the summer.
