Ground chicken or turkey

Yo Chef:

I just bought a couple of packages of ground chicken and routinely buy ground turkey - I have not eliminated ground beef, but these are reasonable substitutes and ground turkey is pretty cheap at the commissary. I have found, though, that each has a very different flavor than ground beef (though I can pretend not to notice). I did find a good lo carb Shephard's Pie recipe online using cauliflower instead of potatoes that was ridiculously good, but other than that I have not found a recipe for either that utilizes the turkey or chicken flavor profile well... any suggestions?

Meat loaf the obvious easy suggestion. But ground chicken/turkey imo requires more fined tuned seasoning than pork/beef otherwise it can taste bland imo

Instead of meat loaf in tomatoe sauce, i prefer the mushroom sauce with poultry... Can slap a few slices of beacon to add taste and moist

Tacos would be another good suggestion. Taco is so strong tasting with the paprika/cumin/oregano that any protein will do. I always use tempeh for tacos

Basically anything that has lots of taste... You could make burger and serve it with a garlic and basil mayo

Good old chop suey would be good too with jamaican pepper and a strong broth

Thanks - good thoughts.

Tacos/burritos, I have done - and you are right about the potential for bland and I will mix in a lot of seasonings and grill onions, peppers, and sometimes carrots or other veggies if I do that with ground turkey (haven't tried with the chicken).

I will be honest that I haven't been successful with the meatloaf... the mushroom sauce is a great idea.

I have also messed up burgers sometimes, in that I think that I overhandle it and try to hard to put lots of flavors in - it turns out a weird texture for me versus ground beef sometimes, but I don't know what I do wrong. There are times I hit the mark and it is great... other times it is less than satisfying.

In any event, I will try the meatloaf idea and chop suey has me wondering... will try that also.

It's getting the time of year for Chili so, here's a recipe for Chef's not yet famous White bean Chili.... You can use ground turkey or ground chicken for this recipe....

Ingredients:
2 tablespoons extra-virgin olive oil
1 onion, chopped
3 cloves garlic, chopped
2 jalapeno peppers fine diced
1 poblano chile pepper, seeded and chopped
1 tablespoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon dried oregano
1/4 teaspoon ground allspice
2 pounds ground chicken or Turkey
Kosher salt and freshly ground pepper
2 15-ounce cans white navy beans drained
1 4-ounce can chopped green chiles
2 cups chicken broth
2 cups shredded pepper Jack cheese
3 corn tortillas, torn, plus more for serving
1 bunch cilantro, leaves roughly chopped
Shredded Jack cheese, sour cream and pickled jalapenos, for topping
Lime wedges, for serving

Procedure:

Heat the olive oil in a large heavy bottom pot or Dutch oven over medium high heat. Add the onion, garlic, both jalapenos, the poblano, cumin, coriander, oregano and allspice. Cook, stirring occasionally, until the vegetables are softened and the spices are toasted, about 7 minutes. Add the chicken or Turkey, 1 teaspoon salt and a few grinds of pepper. Cook, stirring and breaking up the meat with a wooden spoon, until it starts browning, about 5 minutes.

Add the beans, canned chiles, chicken broth and 1 1/4 cups water; bring to a boil. Add the torn tortillas to the pot; reduce the heat to medium low and simmer, stirring occasionally, until slightly thickened, about 40-50 minutes.

Finally, stir in the 2 cups of Pepper Jack cheese adding a little at a time until fully incorporated.. Finish w/ all but a few tablespoons of the cilantro; season with 1/2 teaspoon salt and a few grinds of pepper stir again.... Serve with assorted toppings, garnish w/ the reserved cilantro, lime wedges and more tortillas.... As always, happy cooking!
