Really Arby's?

I saw commercials for them making smoke house sandwiches and thought brisket was the only thing they did, then saw turkey. One guy from work had a pork belly sandwich.

I finally remembered to buy one and holy pig!

Arby's is expensive but when I get tired of the same ol' places I give Arby a try. But since these sandwiches are limited time I'm thinking about stopping by more. But, it is really fatty and after eating a whole one you kind of feel all that pork fat in your gut. But man it was good in the beginning.

Try the combo one with turkey, brisket and pork belly. You won't want to eat for a long while.

I would too just to see what the fuss is about. I know I'd be disappointed. The only thing I still have high hopes for is kobe beef.

I read a food article and it said wagyu beef really isn't kobe because since in America and FDA regulations on meat would make kobe beef not pass. Then, I read another saying like Virginia hams can only be called that if they are cooked in a certain part of Virginia and everything else is called "country ham". I don't know which story to believe but if I have an opportunity to try it I'd probably get the cheapest possible serving and try it. Like prime cuts of steaks, I'll look for the cheapest one or get a higher price choice cut.

$220 for 4oz? yeah fuck that. Guess I'll stick to Select cuts.

I've only seen "Real Kobe steak" so I can't comment on it's taste or texture but I've prepared and eaten plenty of Foie gras during my long career and it's rich and fucking delicious.... And I admit to being a bit insensitive to the plight of animals that are bred for human consumption.... But as a healthcare Chef working at a hospital that serves a high % of vegetarian foods I find myself eating meat, fish and poultry just once a day now.....

It took me a while, but I found pork belly that I can cook myself. It was pretty small, instead of cooking on the grill I put it in the oven as a practice run.

I need to figure out how to cook the skin or just remove it. The subcutaneous fat is delicious but only in small quantities. I'm going to maybe try it one more time before moving to the grill.

Filipinos put in in the broiler skin side up. It turns the skin into Candy like meat.

I put a small pork belly on my little smoker. Should put a water pan in there, because it was directly over the fire.

The meat itself was a bit tough, but the fatty meat and rendered fat was good. As I was cutting it, I noticed the bottom part was crunchy. I was going to toss those bits away but instinctively (I'm a fatty) I chucked those bits in my mouth. Crunchy... I accidentally made bacon!

Went to youtube for recipes and some, they constantly baste it. I might try that.
