EASTER SUNDAY DINNER... what are you all having/doing?
We\ve got about 10 people coming over.
The main courses will be poached salmon fillets, and also a Prime Rib Roast done very low and very slow, with lots of garlic and rosemary. People can one or the other or both.
We'll also have some very nice side dishes, including rice, and various salads. The house is full of chocolate, and I also have some very nice cheeses, wines, (including Port to go with Stilton) and other assorted drinkables.
I'm going to do the Prime Rib Roast indirectly in my charcoal grill. No extra smoke (not necessary with this roast) just very low and very slow. Does anyone have any suggestions about this?

I'm working 12. The rest of my family is going to a dinner place locally that is doing a special brunch spread.

Since I'm a single parent now and my 18 year old daughter is vegetarian I made the two of us cheese Enchiladas w/ home made green chili sauce stuffed & topped w/ a Jack/Cheddar cheese blend..... My simple menu finished w/ a nice baby greens salad w/ salsa ranch dressing and a friend from work makes these awesome lemon meringue pies so she made us one....
