Chef's Red Potato Salad

Here's a recipe for a terrific side dish to bring to your next cook out! 8)

Ingredients
5 large red potatoes, peeled and cubed
2 ribs celery, fine dice
1/2 cup green onions chopped
1/2 cup red onion fine dice
3 hard-boiled eggs, 2 chopped and 1 sliced
1/2 cup cooked bacon crumbles
1/2 cup shredded Cheddar cheese
2 heaping tablespoons sweet pickle relish, drained
1/2 cup salad dressing, (recommended: Name brand Mayo)
3 tablespoons Dijon mustard
1 tablespoon sugar
Paprika, for garnish
Salt to taste
Directions
Bring to a boil cubed potatoes then reduce heat to simmer and cook until they are nice & tender. Drain and cool in fridge.... Then in a large bowl add celery, onions, 2 eggs (diced) and pickled relish. Add the mayo, yellow mustard and sugar and remaining ingredients then stir well. Place the sliced egg on top of potatoes and sprinkle with paprika and salt. Let the potato salad chill in the refrigerator for 2 1/2 hours or overnight before serving.... And as always happy cooking!
